On a productive day


Just one of those productive weekend ! On 21 April 2018, until early morning of 22 April and I managed to go for dinner and had a movie.

Healthy Breakfast and Packed Lunch Recipes

One of my 2018 resolutions as Bel enters Secondary School life is to make healthy breakfast and packed lunch options so that both she and I could enjoy and be at ease with the lower intake of carb and higher protein content. I like savoury stuff so naturally, I hardly have any sweet meals here.

Here are some of my own adapted recipes which I have learnt from meals recipes in the internet.

1) Chicken Burger in Lettuce Wrap 
  • 1 Kg Minced Chicken
  • 1 Egg
  • 2 Tbsp Yoghurt
  • 1 Tbsp Oyster Sauce / Bbq Sauce / Any "special" Sauce
  • 1 Tbsp Light Soya Sauce
  • 1 tsp Dark Soya Sauce
  • 1 pack of fresh tiny button mushrooms
  • 1 small carrot shredded
  • 1 small onion diced
  • 1 tsp Pepper
  • 1 tsp Salt
  • 1 tsp Paprika 
  • 1 Tbsp Corn Flour (Optional depending if sticky or not)
  • 1 Tbsp Herbs (Mixed, Oregano, or Fresh Green Onion)
  • 3 pieces of Bread cubes (toasted)
This can make 25 large pieces, I use Ice Cream Scope to scope a round portion and fry them batch by batch, brown on both sides and flatten. After that, bake for 20 minutes at 180 C. 

I warm it up in the morning for 10-15 mins 180C and wrap with Iceburg Lettuce or Lettuce.
Variation : Server Chicken Burger with baby cucumber, cucumber slices, lettuce, tomatoes.

2) Quiches in Muffin Tin

Deep Muffin Tin (12 pieces) :-
6 Eggs
1/2 Cup Milk
1/2 Cup Shredded Cheese
Half of Zuchinni shredded
Some Bacon diced or Chicken Burger diced
Salt
Pepper

Line the Muffin Tin with compressed bread as base, pour the mixture into the Muffin hole. Bake for 20 minutes 170 C.

Shallow Muffin Tin (12 pieces)
3 Eggs
1/4 Cup Milk
1/2 Cup shredded Cheese (I used Cream Cheese)
1/4 Piece Zuchiini Shredded
Some Bacon diced
Salt
Pepper

(Fill up 12 muffins holes for shallow tin)
Bake 20 mins 180C
Make sure Cupcakes mould covered with oil.



3) Crustless Quiche 

½ cup flour
¼ tsp baking powder
4 eggs, beaten
2 cups low fat milk
75g reduced-fat spread/butter, melted
210gm can pink salmon, drained
1 slice ham, chopped (optional)
1 onion, chopped
½ cup grated cheese
handful of chopped fresh chives (optional)
1 tomato, cut into rings (optional)
black pepper, salt
180 C 45 mins

Note :- I have baked this once, my oven can reduce time as it was too brown. I will reduce or remove the butter / oil as it was a bit too oily. The quiche is not firm, a bit wet and soggy.



4) Chicken Veggie Cheesy MeatBalls

1 Kg Minced Chicken
1 Medium Onion
1 bunch Parsley chopped
1 Celery Stick diced
1 bunch of Oregano (fresh)
Cheddar Cheese (in tiny cubes)
1 Egg
2 Tbsp Yoghart
1 tsp Dark Soya Sauce
1 Tbsp Oyster Sauce
4 Bread toasted and diced
3 Tbsp Bbq Sauce (can be other options)

Mix them up and roll them into balls, put in the cheese cube inside each meatball. Bake at 180 C for 20 minutes.

Note :- They looked a bit too pale but taste was good.
This taste more yummy than its pale look.

5) Chinese Lagsana with Chicken Bolognese 

Chicken Bolognese
Chinese Wanton sheets
Cheese
Tiny Glassware or aluminum Bowls

Layer the Chicken Bolognese, shredded cheese  and Wanton sheets.
Bake till brown.

6) Chicken Breast Various Flavours 

500 gm Chicken Breast (100 gram portions)
1 Tbsp Yoghurt
Salt & Pepper
2 Tsp Soya Sauce
3 Tbsp Sauce (BBq, Hoisin, Black Pepper. Rendang Sauce,  etc)

Marinate them in Zipped Locked Bags or plastic containers overnight or in freezer.
Defrost them before sleep and roast in the morning.
Roast 15-20 mins 180C

Note :- The variation is endless, from western to oriental, Chinese or Indian or Malay.

7) Jacket Potatoes

Medium size potatoes
Chicken Bolognese
Cheese

Wash the potatoes well. Cut a deep line on top. Boil the potatoes like 10 minutes. Then wrap them in aluminium foil. Roast them for 15 minutes. Before eating, pull Chicken Bolagnese and cheese on top and bake till cheese melt.

7) Roast Chicken and Salad in Wrap

Matcha Sponge Cake



I like Green Tea but when it comes to Matcha, I like it as a drink better than the rest. However, Matcha Cake is really nice but I have not tried to make it. Recently, Bel asked me if I could bake a cake for her friend whose absolute favourite cake is Matcha Cake! Ok, that is a good challenge albeit very short notice. I think I will give it a try.

I will use my own Basic Sponge Cake recipe (the age-old recipe) and then add 10 gm of Matcha Tea green powder for the flavourr. Bake 170 C for 50 minutes.

Matcha Sponge Cake

Mixture A
4 Egg Whites
2 Oz Castor Sugar
1/4 tsp Cream of Tartar

Mixture B
4 Egg Yolks
3 Oz Vegetable Oil
3 Oz Water
4 Oz Sponge Cake mixture
2 Oz Hong Kong Flour
1/4 tsp Soda Bicarbonate
10 g Matcha Powder

Method

  1. Whisk Mixture A untuk stiff
  2. Mix everything well in Mixture B and add in Matcha Powder


For the cream, here are two good suggestions from the website:-

White Chocolate Mouse

100 UHT Whippping Cream
50 g Whiet Chocolate
25 g UHT Whipping Cream
1 tsp Gelatine Powder
1 Tbsp Water

Red Bean Cream

170 g red bean paste
100 g UHT Whipping Cream

For rice, don't pan fry. Instead, spread it out on parchment and bake for 12 mins (turn at 6 mins) at 425 degrees. With some sprinkled cumin, it's amazing. I tried all the methods and this yields the best "rice".

Ingredients:
Two sweet potatoes

One egg
1 cup rolled oats
Basil, oregano, salt, pepper

I poke holes in the sweet potatoes and microwave them (5 minutes each side - or until you can easily poke them with a fork). 

Wait for them to cool a bit and then remove the skins. Mash them up and combine the rest of the ingredients. Flatten the "dough" on a parchment paper lined cookie sheet and bake 350 for 20ish minutes. Flip the "dough" halfway through. πŸ™ŒπŸ™Œ

It's not exactly low carb but it's healthier than using regular dough and sooo good. Try making with BBQ chicken and mozzarella cheese as toppings.

Try making a meatza. If you liked a meat lovers pizza before eating LC, this will especially be delish.

Try microwawe it for 5min with a bunch of salt and let it cool down before draining out the water
Works like a charm for me and phew minutes of work only!



Low Carb Pizza

INGREDIENTS
Crust
* 4 oz cream cheese, softened
* 4 eggs
* 1⁄3 cup heavy cream
* 1⁄4 cup parmesan cheese
* 1 tsp chives
* 1⁄2 tsp italian seasoning 
* 1⁄2 teaspoon wet garlic 
or 
* 1⁄4 teaspoon garlic powder
* 2 cups mozzarella cheese

Pizza Toppings
* 1⁄2 cup pizza sauce 
* 1 cup mozzarella cheese
* pizza toppings, of choice

DIRECTIONS
* Preheat oven to 375 degrees F.
* Beat together cream cheese and eggs until smooth.
* Add cream, parmesan, chives, Italian seasoning and garlic.
* Spray 9X13 pan with cooking spray or oil.
* Place 2 cups mozzarella cheese in bottom of pan.
* Pour egg mixture over cheese.
* Bake for 30 minutes.
* Remove from oven and spread sauce over baked mixture.
* Add toppings of choice.
* Cover with remaining mozzerella cheese.
* Bake until bubbly and brown.
* Let stand for 5 minutes.

No moisture in them At all

Let's pray for MALAYSIA! 

Scripture: Daniel 10:1-21
 The Prime Minister has announced the dissolution of the Parliament on 7th April, 2018 to pave the way for GE14 to take place.

The Election Commission has set 9th May, 2018 as our election date.

Regardless of our “preferred outcome” for the election, we, as responsible citizens of the nation, should always be found praying for the well-being and destiny of our nation as mandated by the Holy Scriptures.

God’s servant Daniel was a model, who prayed for the land and served the nation whilst being exiled. On receiving a disconcerting vision, he set himself to mourn for three weeks, ate no choice food, no meat nor allowed wine to touch his lips and used no lotions (Daniel 10:2-3). His objective was to seek understanding of the vision and the times and its duration.

Daniel earnestly sought God for 21 days in prayer and fasting. In response, God heard his prayers, revealed His plans and strengthened him (Daniel 10:12).

NECF remains non-partisan, and this is not a call for a change of government, but a call to all our members to humbly seek God so that He will hear our prayers and His sovereign will be done in our nation and that all Malaysians will be blessed by God.

Our sincere desire is to see good men and women, from both sides of the divide elected into Parliament and into the State legislatures.

Like Daniel, we want to “set our heart to understand, and to humble ourselves before God” (Daniel 10:12).

This season to seek understanding of the times, is also a season for the Church to repent.

So much of what has been expounded in Revelation with regards to the “seven lampstands” are prevalent in our modern-day Church. Unless the Church is willing to put Him first, serve Him unreservedly, honor His Word, acknowledge we are all on a pilgrimage, and once again make His House a House of Prayer, we will not doubt like our forefathers “drink from the river and die in the wilderness.” (1 Cor 10:1-6; Psalms 78:16)

God will not use an unrepentant, prideful Church to be an agent of change in the nation. Today, both the Church and the nation need prayer.

With effect from 21st April, 2018, we will start our 21-Day of Prayer and Fasting,

As part of the preparation, let us do the following:

1. Clear your calendar to set aside this period of time to pray a minimum of 21 minutes at 2100 hour (9.00pm) for 21 days, every day.

2. For the next 21 days, get your family involved or organize a small group of like-minded believers to pray together (create social media eg. Whats App group to remind and encourage one another).

3. Decide on the type of fast you and your group will be doing. eg no meat; no dinner; no media; etc…and continually encourage each other.

4. And pray for the following:

A. Before the Election: 21st  April to 8th May (Day 1-18)

Church:

1. The Church to humble herself before the Lord (1 Peter 5:6)
2. The Church to seek the Lord (2 Chronicles 7:14)

Nation:

1. The eyes of the Nation to be enlightened (Ephesians 1:17-18)
2. The Nation to hope in God (Isaiah 45:22)

 B. During the Election: 9th May (Day 19)

Church:

1. The Church will arise and shine (Isaiah 60:1)
2. The Church to sow in righteousness (Hosea 10:12)

Nation:

1. The Fear of God to overshadow their hearts (Proverbs 9:10)
2. The Lord to direct their path (Proverbs 16:9)

C. After the Election: 10th & 11th May (Day 20-21)

Church

1. The Church to be ceaseless in prayer (Isaiah 62:6-7)
2. The Church as the House of Prayer to be restored (Mark 11:17)

 Nation

1. The rulers will govern with justice and righteousness (Proverbs 14:34)
2. The land will be blessed with peace (Leviticus 26:6)

Let us humbly submit ourselves to the Holy Spirit’s guidance as we take this 21-Day journey.

Daily devotionals will be sent out to help us in our prayer time.

May God bless you as you seek to be a blessing to the Church and our beloved nation.

10 War Room Prayers for Our Nation

Dear Brothers & Sisters,
This was a call made to the churches in the US during their last elections. I feel it is also applicable for us, right now.

It’s clear we need to wage war on our knees...

As a child of God, it is our responsibility to join the fight. Not in some political campaign or with comments and arguments on Facebook, or just complaining... but on our knees, with the Word of God spread out in front of us....


Let’s turn off the news and news feeds and let’s spend ten minutes a day praying these scriptures for our nation.

We have weapons strong enough to destroy strongholds.


II Chronicles 7:14

Lord, You promise that when your people pray, humble themselves, and seek You, You will hear and answer. You even promise healing in the land.  Lord, our land needs healing and I believe it starts with me. I humble myself before You right here, right now. I’m seeking Your face. I ask You to grant me a repentant spirit so I may be an instrument that ushers in Your blessing for this nation.



Psalms 33:12

Lord, Your blessing has been upon this nation and I thank You for your kind mercies! But Your word says the blessed nation is the one whose God is the Lord and our nation need You to be Lord over this land.  Father, on behalf of myself and my people, I confess our disregard of You. Bring Your people to repentance and let Your church arise, strongholds be broken and pour Your Spirit afresh and bring forth a spiritual revival, like never before.



Proverbs 14:34

Righteousness exalts a nation, Lord. Not flagrant personalities, injustice and corruption. Not the boastful pride of man or “progressive” lifestyles or quick talking politicians who present themselves as the solution for the world.  Righteousness, Lord, righteousness is what we need. Oh Lord, let Your righteousness rain down on us and spring up from within every home and community in our land!



Proverbs 9:10

Lord, help us not to be fearful what men can do for these men do not fear You. I humble myself before You to beseech Your mercies on behalf of a people who don’t fear or acknowledge You. Forgive us, Father! Strike a fear in the heart of Your people and those who oppose You! Show us the seriousness of our sin and the holiness of Your majesty. Let us see and understand You as God… King… Sovereign One… Ruler of heaven and earth. And let us be wise!

Lord, You promise that the gates of hell will not overcome Your church. You have a people and You have a plan that will not fail. No matter what, Your purposes will prevail. You are in Your church and indwell Your people. In this we take great hope. Strengthen Your people, Lord! Strengthen Your church in this country! Let us rise to the battle cry and faithfully stand firm! Stir up our passions and desires for purity, holiness, and intimacy with You. Let us walk in the unquenchable fire of Your Spirit.



II Corinthians 6:17

God, call Your people to come out and be separate. All across this land, call  Your people to set aside worldly wisdom, pride and appearances, materialism, the need for approval, idolatry of all sorts. Lead us out and lead us up. Make this country a holy nation, a royal priesthood, set apart for worthy purposes. Stir in each and every heart to come out and be different!



Isaiah 6:1

Oh Lord, we need to see You as You truly are, not as what others say You are. Let Your people see You high and lifted up! Let us see You as holy. Let us understand Your nature, character, and sovereignty. Let us know Your word. Sweep across this land and reveal Yourself like never before. Let us know You, God!



Isaiah 60:1

Cause each of Your children to shine brightly in this dark land, Lord. Let each light take it’s place on a lampstand and draw others to You. May those without Christ see our good works and glorify You. We pray that many will come to know You and confess You as Lord.



Daniel 2:21

Lord, we believe in Your sovereignty. We know You are the One who sets up rulers and kings. You hold all things in Your Hands. We pray for our leaders and future leaders…and those who elect them… to have wisdom, knowledge, and discernment, for these things come from You.



Matthew 6:10

We pray for Your Kingdom to come, Your will to be done on earth as it is in heaven. We know Your will is for righteousness, salvation, and truth. We pray for these things to define our lives, our marriages, our homes, our communities, and our nation. We ask for Your church to be vessels that usher in Your Kingdom and fulfill Your will. Grant us, Your servants, success as we seek to glorify Your name.

Wallet said:  Save now for the future.
Mirror said:  Always observe yourself.
Lamps said:  Light up other's life.
Wall said: Share others' load.
Window said: Expand the vision.
Floor said:  Always be down to earth.
Stairs said:  Watch each step you take.
