Wallace's 21st Birthday Party






Birthday Cake Table Decorations
  • Pandan Cake (Main Cake)
  • Cake, Ice Cream (Choc, Yam), Oreo Crush
  • Moist Choc Cake
  • Carrot Walnut Cake
  • Goodies Bowl - wafer biscuits


Additional Food to ready 
  • Tea Eggs
  • Baked Nian Gao
  • Chic Pea Cheese Dip
  • Pineapple Pastry

However, the caterer got it mixed up and we nearly lost our food, never mind that what was delivered was not ours and sent a 50 pax instead of 60 pax.

Carrot Walnut Pineapple Cake

In short, this is Carrot Cake, the much loved and a much fussed-about recipe. This is a recipe that needs practice in order to be perfect. A bit too much cinnamon, it will be too strong in spice. A bit too many wet ingredient, the cake is too wet, dense and heavy. We love the light Carrot Cake, not too heavy in ingredients, not too strong in spice.

Ingredients A

3 Eggs
1/2 Cup Brown Sugar
1/2 Cup Castor Sugar
1/2 Cup Vegetable Oil
1/2 Cup Buttermilk
1 tsp Vanilla Essence

Beat Ingredient A until smooth. Possible to use hand whisk.

Ingredients B
2 Cups Self Raising Flour
1 tsp Baking Soda
1/2 tsp Salt
1 1/2 tsp Cinnamon Powder

Sift Ingredients B

Ingredients C
2 Cups Grated Carrots (1 1/2 Large Carrots)
8 Oz Pineapple Crushed
1/2 Cup Dessicated Coconut
1 Cup Pecans / Walnuts Chopped

180 C 25 - 35 mins 9" Round Tin

Method :-
1) Mix Ingredients A together and beat until smooth.
2) Sift Ingredients B and add to A.
3) Fold in Ingredients C into cake mixture.

It is possible to make this cake without mixer, hand whisk will do.

Valentine Birthday Menu

February is overloaded with birthdays for my family and usually, it is Chinese New Year and a Valentine. So, this is what happened when you have a family member whose birthday is near Valentine and Chinese New Year, he gets the idea that it is outdone by Chinese New Year totally and when Valentine, who wants to celebrate birthday right?

This is an attempt to combine Valentine and Birthday celebration into one or rather incorporate Valentine elements into a birthday party just before Chinese New Year! Here is some menu that I want to try:-

Menu:
  1. Chicken Burgers (home-made) with buns 
  2. Mac and Cheese 
  3. Shepherd Pie using old Bolognese Sauce 
  4. Roast Chicken Drumsticks - 3 Kg
  5. Roast Lamb
  6. Coleslaw
  7. Green Salad
  8. Carbonara Pasta
  9. Cauliflower and Mushroom Soup
  10. Bak Kut Teh
  11. Tea Eggs
Desserts:
  1. Durian Fresh Cream Cake
  2. CNY Rice Cake
  3. Chocolate Fountain - Banana, Grapes, Mashmello
  4. Iced Lemon Tea

BBQ Party Prepartion







Here is a record of how I prepared for a BBQ Dinner party for about 40 pax. I always plan for more meat, any extra, we could put them aside for family meals. This happens to be Elliot's 21st Birthday on 3 September 2017, we have a few good recipes and have been tried out before.


Guest List :-

1) Our family - 7
2) Tai family - 12 + Grand-Aunt Cecilia
3) Heng family - 11
4) Annie family - 6
5) Aisha - 2
6) Elliot's friends - 6
7) Rekast friends - 6

Total :- 51 (about 7 kids)

Menu :-

1) Spaghetti Mee & Bolognaise Sauce
2) Tea Eggs
3) Chicken Wings -  6 Kg
4) Lamb Shoulders (Bone & Meatless) - 4 Kg
5) Hot Dogs - 8 packs
6) Sweet Potatoes
7) Mashed Potatoes
8) Macaroni Cheese
9) Coleslaw
10) Green Salad

Desserts :-

1) Tiramisu
2) Red Velvet Cake
3) Iced Lemon Tea
4) Beer

The night before, I ready :-

1) Tiramisu
2) Tea Egg Mixture
3) Cake

Wallace Heng's 18th Birthday !




From Mum to Wallace :-

Two years ago, it was sweet 16. Today its 18th birthday for you, time to enter the adulthood highway. Cruise carefully and remember to stop to enjoy the scenery and meet with people along the journey. Life is a journey to be enjoyed and not meant to be rushed.

Happy 18th Birthday Son ! Growing up is too slow for you and too fast for me. Remember that Mum & Dad loves you all the way to the moon and back.
